
Malibu Chicken
6 boneless skinless chicken breasts (pound 'em thin)
6 slices cooked ham
6 slices swiss cheese
1 egg
1/4 cup flour
1/4 teaspoon salt
1/8 teaspoon pepper
3/4 cup fine dry breadcrumb
2 tablespoons vegetable oil
2 tablespoons butter
1 tablespoon water
1 teaspoon mustard
1/4 cup mayonnaise
Stir egg and 1 tablespoons water together with a fork. Combine flour, salt and pepper and coat each chicken piece, dip into egg mixture and then coat with breadcrumbs making sure to press crumbs in firmly. Heat oil and butter in large skillet over medium heat.Brown chicken 4 to 5 minutes on each side. Place browned chicken on cookie sheet or oven proof platter, top each piece with a slice of ham and slice of cheese. Bake at 350 degrees, until cheese melts. For the dipping sauce combine mustard and mayonnaise.

Ive made this twice now and my family loves it! But what kind of bread crumbs do you use? Because my chicken doesnt look this light after ive fried it.
you can use fine bread crumbs but my fave is the Panko bread crumbs. They are the Japanese breadcrumbs and they have a whole different look and texture. Good luck!

I have always added just a dab of sugar to the mustard/Mayo sauce. I think it makes it taste more like the Sizzler dipping sauce.
This is actually the exact recipe for the Malibu sauce from Sizzler.

what kind of sides would you serve with this?
You know, my husband is a potato fan...so his solution would be mashed or fried potatoes. A nice salad or some veggies and/or fruit that are in sesaon.

I was so sad when I moved away from Utah and didn't have a Sizzler around me...They just opened one up a few miles away from me and last night I went there for my Anninversary. I had my favorite meal...Malibu Chicken with Loaded Baked potato. Can not wait to try this out at home. Thank you
