Cheesecake Stuffed Peaches

         I am a sucker for anything cheesecake. I have done cheesecake stuffed strawberries before but peaches are just starting to come into season. Yumm! Top with some crunchy granola and a little nutmeg..HEAVEN! The recipe and picture came from Better Homes and Gardens.You can thank me later..

Cheesecake Stuffed Peaches
6 peaches, halved and pitted
1/4 cup butter, melted
3 Tbsp. cinnamon-sugar*
4-oz. pkg. cream cheese, softened
1/4 cup sugar
1 egg yolk
1 1/2 tsp. vanilla
    Preheat oven to 350°F. Line a 15x10x1-inch baking pan with parchment paper; set aside. Trim a very thin slice from the round side of each peach half so halves stand flat on the baking pan. Dip peach halves in melted butter to coat. Arrange peach halves, cut sides up, in prepared pan. Sprinkle cut sides of peaches with cinnamon-sugar; set aside. In a medium mixing bowl beat cream cheese with a mixer on medium speed until smooth. Add sugar, egg yolk, and vanilla. Beat until combined. Spoon cream cheese mixture into peach centers.  Bake, uncovered, about 30 minutes or until lightly browned and softened. Serve warm or at room temperature. I sprinkled some nutmeg over the top.
***Granola would be fantastic on the top just for some crunch.

I will always give credit where credit is due whether it be a recipe or a photo(I am not a great photographer) whenever possible. I truly believe that meals are meant to enjoy with loved ones. Meal planning is key! Let's get back to gathering around the table a few nights a week. I know that you won't regret it. I am always on a quest to find new recipes.
